Dairy and egg free Waffles

Warning, moreish and addictive! You may need to lie down afterwards of you eat too much, as a certain Daddy we know had to do.


Prep time 15 minutes

Cooking time 5 minutes

Ingredients

1 3/4 cups flour of your choice

1/2 cup rolled oats

1 1/2 tsp baking powder

Pinch salt


1 1/4 cups dairy alternative milk

1 tbs apple cider vinegar

1/2 cup olive oil

1/4 cup maple syrup

1 chopped banana

Fresh fruit and maple syrup, ice cream optional


Method

Preheat a waffle iron to medium temperature and grease once warm


Mix and stir the dry ingredients in a large bowl


In a seperate bowl combine the milk and vinegar and set aside for 10 minutes to turn into buttermilk


Add 1/2 cup olive oil and 1/4 cup golden syrup to the buttermilk and stir until combined


Stir in the banana and wet mixture into the dry flour mix and until a thick batter is formed


Pour 1/2 cup of batter into the waffle iron until spread and cook for roughly 5 minutes until golden brown


Remove once cooked and add desired toppings


Voila! Enjoy!
