Chocolate Salami with Caramel Nougat

Chocolate! By this time you have already realised that we are addicted to chocolate. I was not feeling well so spent time resting and watching videos when I come across a version of salami (Tuga na Cozinha) like I had never seen. I even felt better and jumped out of bed to make it.


Chocolate salami is a traditional Portuguese and Italian sweet made with chocolate, cookies, butter, eggs and Porto wine.


The salami has a round shape and is served in thick slices. Some kinds also contain chopped nuts, almonds and hazelnuts.


I remember my childhood birthday parties so well, salami was always on the table. Salami and the candies spread around the desserts. I always do it at my children's parties as I am a deep fan of traditions.


It had to be adapted, but the changes were complicated:

Chocolate - I used a vegan chocolate free of the TOP14 allergens and more.

Cream - Replaced by coconut milk, I could have used vegan cream there are already some options on the market, but I had an open can and I use it.

Peanuts - It is one of my children's allergens so I changed for pumpkin seeds.

Cookies - I used Speculoos, which are cookies that have a cinnamon taste.

Porto wine - I haven't used it, but try it if you like it.




Recipe


Ingredients

  • 200g Vegan Chocolate

  • 1/2 cup of Coconut Drink

  • 1/2 cup Powder Sugar

  • 1/2 cup of Cocoa

  • 1/2 cup of Vegan Butter

  • 1 packet of Cookies

  • 1 cup of Pumpkin Seeds

  • 1/2 cup of Granulated Sugar

Instructions:

  1. Nougat preparation: Place the granulated sugar in a saucepan. Leave to caramelize, over low heat, until slightly golden. Add the seeds and wrap in the caramel.

  2. Place a sheet of parchment paper on a smooth surface and pour the nougat.

  3. Allow to cool completely.

  4. Put the chocolate in a bowl with the coconut drink and melt. You can use Bain Marie or the microwave.

  5. Allow to cool slightly and add the butter. Stir to homogenize.

  6. Add cocoa and powdered sugar. Involve.

  7. Smash the cookies. To give texture leave with different sizes. With a 1/3 of the cookies, grind to a powder. Add to the chocolate.

  8. Place the nougat in a food processor and grind lightly. Do not reduce too much.

  9. Add to the chocolate. Mix everything very well.

  10. To finish, you can put it in an English cake mould or put cling film on the counter, in the centre put the chocolate, close it and make a roll.

  11. Reserve in the fridge until firm, or place in the freezer for 45 minutes.

  12. Cut and serve.

I think you will love this as much as my kiddos do. It's a must have in every birthday party and you can control the amount of sweetness and use your favourite cookies.
