Caramelized Onion Hummus

A #quickrecipe for #healthy #homemade #chickpea #hummus which is #sesamefree, infused with #caramelizedonion for an extra layer of flavour. Serves as a #nutritious #dip great with #crudites.



Ingredients

One large red or white #choppedonion

1 tbl #Applecider or #redwinevinegar

1 can drained #chickpeas

1 chopped #garlic clove

1tbl #lemon juice

1tsp smoked paprika

Salt and pepper to season


Method

Sweat the onions in a pan over a medium heat for 5-10 minutes until they start to soften.


Stir in the vinegar and chickpeas and cook on low for 5 minutes, stirring through frequently.


Take off the heat and allow to cool gently.


Transfer to a blender or to a bowl and use a handheld blender instead.


Stir in the rest of the ingredients and blitz until it forms a smooth thick paste.


Transfer to a dipping bowl and serve as desired with sliced carrot batons or other raw vegetables.
