Strawberry Drizzle Cake

Prep time 5 minutes Cooking time 25-30 minutes Ingredients 1 1/2 cups all-purpose flour gluten-free, if necessary 1 cup sugar or half cup granulated sweetener 1 tsp baking powder 1 tsp bicarbonate soda 1/2 tsp salt 1 tsp white or apple cider vinegar 5 tbsp olive oil 1 1/2 tsp Vanilla extract 1 cup water Drizzle and Topping 100 gr dairy free soft cheese 100gr icing sugar 2tbs strawberry jam chopped up strawberries and raspberries to decorate optional baking bling Instructions Preheat the oven to 180C. Line a square pan with greaseproof baking paper, allowing enough each side to overhang, for easy removal. In a large mixing bowl, add the dry ingredients and mix well. Form three wells in the dry mixture. In one, add the vinegar. In the second, add the vanilla extract, and in the final one, add the Oil. Pour the water over the top and using a whisk or wooden spoon, mix together, until fully combined. Transfer the batter in the lined pan. Bake for 25-30 minutes, or until a skewer comes out just clean. Remove from the oven and let cool in the pan for 10 m In a seperate bowl slowly stir in the icing sugar, jam and soft cheese spread until it forms a runny paste Spoon and spread over the cooled cake and decorate with berries
