Chocolate Hot Cross Buns

Until recently have I only found out that hot cross are traditionally served and eaten on Good Friday. So I made it a mission to try making them today and share it just in time. These buns are wheatfree, eggfree, dairyfree, or free from most allergens and are moist and oh so yummy according to my little food critic. Ingredients (makes 9 mini buns) 260 grams wheat free/ gluten free flour 60 grams cocoa 55 grams sugar 2 tsp fast acting yeast 1 tsp cinnamon powder 1/2 tsp nutmeg 1/4 tsp salt 50 grams dried mixed fruits 50 grams vegan chocolate chips 1 tbsp + 1 tsp constituted Orgran/ any egg replacer 3 tbsp vegetable oil 1 cup + 2 tbsp warm oat milk or dairy free milk of choice Cross Piping 1/4 cup GF flour 1 tsp sugar 2 tbsp water Glaze Maple syrup Extra oat milk Directions: Measure and mix all dry ingredients including the dried mixed fruits and chocolate chip. Make a well in the middle and add the wet ingredients in. Using a dough hook in a stand mixer, mix everything well for 3-5 minutes. You can also just do this with a spatula for 5-8 minutes. If the dough still seems dry (as GF flours can be different), add more warm oat milk 1 tsp at a time until the dough is soft but not too sticky. Form the dough into a ball. Cover with a tea towel and prove in a warm place until double in size. Take the dough and divide into 9 equal pieces. Knead into balls. Arrange the buns into a 9” square pan. Cover and prove again for 20-30 minutes. The size should increase by this time or almost doubled in size. Mix the GF flour, sugar and water in a small bowl. Using a flat piping tip, pipe the mixture above to form crosses on the buns. With a brush, sprinkle or slowly brush some oat milk unto the buns. This helps with the rise and making the buns soft and moist. Preheat oven to 145 deg C. Cover the baking tray with a foil and bake for 10 minutes. Then remove the foil and bake for 10-15 minutes more. Remove from the oven and let the buns cool down for about 10 minutes. Brush the buns with maple syrup. Serve warm and enjoy! ❤️❤️
